One of the best Middle Eastern dishes is based on fattoush; it is a crisp and colorful salad served in the Middle East. Through this recipe you can add a little extra flavor tone and protein to you normal diet. Fry some Pitta bread until it becomes crisp, fill it up with a variety of ingredients, and serve the meal immediately. Preheat the grill to the maximum. Warm the grilled pita bread in a few seconds, or until it becomes fluffy and then carefully split the middle and until it opens like a book. Place the bread back on the grill and cook it for 2-3 minutes on each side, until it gets a brownish color and a crispy appearance. Cut it in bite sized pieces and set them on a plate. Mix in a bowl some olive oil and lemon juice; season them according to your taste with salt and pepper. Add green onions, tomatoes, cucumber and tuna and stir gently to soak the oil mixture and lemon juice. Add to the bowl parsley, coriander, mint and bits of the crispy pita and mix everything well. Serve the salad immediately.
